Vegan Cookies Invade Your Cookie Jar

.
. . . . . .

A new cookbook features 100 dairy-free recipes for everyone’s
favorite treats, the cookie. Vegan Cookies Invade Your Cookie Jar by
Isa Chandra Moskowitz and Terry Hope Romero (DaCapo Press, Cambridge,
Mass.; 252 pages; $17.95/softcover) provides recipes for drop cookies,
bars, fancy cookies, and sliced and rolled cookies.

The first part of the book includes a
nice and useful explanation of various types of flours that can be used
for cookies, how to make the treats gluten-free, and what ingredients
to substitute so a vegan creation results. Vegans, remember, eat no
animal products—and that can be tough when cookies require eggs, honey
and milk.

Here is a recipe that is festive enough
for Christmas gift-giving, and it’s likely the cookie monster to whom
you give it will never guess it’s vegan.
